This 200k sq. ft. kitchen commissary manufactures, cooks, and distributes prepared foods for the Fairway Market Supermarkets throughout New York, New Jersey, and Connecticut. The facility incorporates approximately 90k sq. ft. of refrigerated storage and production space, requiring compliance with all USDA regulations. Its location and extremely high utility cost necessitated a super-efficient and reliable refrigeration design incorporating secondary heat transfer fluids and evaporative condensing. Due to the type and quantity of cooking hoods and appliances, we developed a unique design to ensure cooking pollutants were exhausted from the space while maintaining a comfortable interior environment at the lowest lifecycle cost.
